Ultimate Reset Salad

Patrick and I have been doing Beachbody’s Ultimate Reset the past two days. It is a 21 Day detox. You eat three meals a day and take safe supplements along the way to help you detox. The first day was really hard, but the second day was better. We’ll keep you posted on our progress. We really like the meals! This is one of our favorite salads from the Ultimate Reset.

Microgreen Salad

What you need:

  • Bulk or bagged mixed greens, which may include lettuces, baby kale, mizuna, radicchio, etc.
  • 1/4 cup shredded carrot
  • 1/4 cup chopped cucumber
  • 1/4 cup sliced red bell pepper
  • 1/4 cup sprouts (like radish, alfalfa, or broccoli)
  • 1/4 cup chopped tomato
  • 1/4 cup jicama
  • Fresh herbs (like basil, cilantro, parsley, dill)
  • 1/3 cup toasted seeds and nuts (like cashews, pecans, pumpkin seeds, or sunflower seeds)

Basic Vinaigrette Dressing

What you need:

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp. Himalayan salt
  • 1 tsp. ground pepper
  • 1 tsp. unfiltered honey or raw agave
  • 2 Tbsp. fresh lemon juice
  • Optional:  2 tsp, fresh herbs:  basil, oregano, parsley, or dill

Mix all together. Serves 8.
