Pesto Chicken

Happy 4th of July! We hope you are having fun with your families and friends today!

It’s Recipe Wednesday! We tried this one last weekend for the first time. It was really good and easy to make! Now if you are into eating ultra healthy, this probably isn’t the recipe for you, BUT it isn’t a terribly unhealthy meal. So we’re sharing it!

PESTO CHICKEN
Taken from 365 Days of Slow-Cooking by Karen Bellessa Petersen

You Need:

4 boneless, skinless chicken thighs trimmed of fat
1/2 C. prepared pesto sauce
1/4 tsp. black pepper
1/2 tsp. garlic powder
1 Tbsp. tapioca
Hot cooked whole wheat fettucine

What to do:

Cut each thigh into 4 pieces. Place chicken at the bottom of the slow-cooker.
In a small bowl, combine pesto, pepper, garlic powder, and tapioca; pour over the chicken.
Cover and cook on LOW for 3-5 hours.
Serve chicken and sauce over fettuccine.
